This month on “Paris Cocktail Talk”: Building a Sustainable Brand with Avallen Calvados

This month Avallen Calvados co-founders, Tim Etherington-Judge and Stefanie Jordan, talk about the environmental impacts of the drinks industry, how they settled on the production of Calvados to work towards a healthier planet, and their other sustainable approaches from packaging to blockchain technology.

Avallen is a floral, fruity, and completely natural Calvados with apples at its heart and soul. Even their labels are made from apples! Produced entirely in the West of Normandy, Avallen is aged for two years in French oak before being bottled with no added sugar, caramel or boisé. In a category dominated by old-fashioned producers, Avallen represents a younger, fresher and more apple-filled future, with the health of our planet at its core

Tim Etherington-Judge is the founder of Healthy Hospo, co-founder of Avallen Spirits, and co-founder of Lassou. He is a hospitality professional with more than twenty-five years’ experience at all levels of the industry – from tourist-spot coffee shop, to chef, award- winning bartender, bar manager and global ambassador for some of the world’s most recognisable spirits brands.

From London to Bogota, with a sip of Burgundy in between, Stephanie Jordan is the creator and professional powerhouse behind Drinking Out Loud – the luxury wine and spirits consultancy and a strategic consultant at Yellow Global. She is also cofounder of Avallen.

Fresh pressed apple juice for topping

Ginger ale for topping

Lavender sprig or edible flower for garnish

Pour Calvados in highball glass.

Add ice

Partially top with apple juice
